I was a guest at the Maui Chef’s Table and this is what happened.
What’s your idea of a good time? I’ll tell you mine. It is al fresco dining, with farm to table cuisine prepared by one of Maui’s rising culinary talents. Maui Chef’s Table is all that and more.
Jeff Scheer, the 2015 Aipono Chef of the Year, offers a seven-course meal prepared with and inspired by local produce, fruit and protein. Maui Chef’s Table is at The Millhouse on the grounds of the Maui Tropical Plantation. Seating is limited to fewer than 40 and the meal is prepared in the dining area. The menu is set by the Chef and based on what is fresh and available.
Recently I was given the opportunity to attend this weekend only event as a guest. I arrived as the sun was setting. Maui’s weather had finally cooled after a record-breaking El Nino year. The outdoor venue, with its breeze from the West Maui mountains and views of the star filled Maui sky was an ideal setting. The decor was perfectly rustic modern. We were all greeted and seated immediately. Management and the chef mingled and chatted with us, setting the stage for an intimate and inclusive evening.
As they served the first course, they encouraged us to get out of our seats and mingle with our hosts as they prepared and plated our meal. At each course, Chef Scheer shared with us how the dish was conceived, prepared and sourced. As he spoke, his passion for local first and creativity was evident. My favorite dish was the local poblano pate in a pie dough with sweet potato, house mustard and Haiku honey. I also loved the eggs from Haleakala ranch with anchovy sauce on pumpernickel crostini. Other Hawaii sourced components included Kauai shrimp, kale from Kumu farms and Ali’i mushrooms.
It was a lovely evening overall spent sharing a meal with like-minded foodies.
Maui Chef’s Table is a fine dining event with a relaxed informal vibe that fits our Maui lifestyle. It isn’t an offering of time tested classic recipes previously reviewed and photographed. Rather, it is an opportunity for the adventurous eater to try new combinations of fresh flavors and to peek into Chef Sheer’s imagination and process.
The Table is not just a dining experience. It is a chef experience.
