You can take away my wheat, you can even take away my caffeine but you will never, ever, take away the incredible edible egg from me.
We all know those people who can eat a little muffin for breakfast, or a grapefruit or nothing at all. I am not one of those people. I need a hearty breakfast. I always have. I wake up hungry and craving protein. My current go to is an egg scrambled with a little cheese on a warm corn tortilla topped with salsa and a little cup of con queso sauce on the side. Another variation is a scrambled egg on a flour tortilla with parmigiano reggiano shavings (the one in the big tub from costco) and a couple of slices of turkey bacon. This weekend I’ll be making little frittata like delectables with onions, cheese and tomatoes in a muffin tin courtesy of Paleo Comfort Foods. I’m pretty sure cheese is not proper paleo but what can I say, I’m a quarter German. These little egg muffins can be frozen and reheated for those mornings I’m in a rush.
If you’ve been reading my blog or following me on instagram for awhile, you are familiar with my tendency to eat eggs bennies in every town I go to. Seriously, if you are visiting Hawaii and want to know where to get a good bennie, I’m your girl. I recently discovered I have a wheat allergy but I don’t let that stop me. Give me a lobster and spinach bennie please, hold the wheat…yup, you heard me right bruddah, bennie sans english muffin or those fancy little toast things (I’m talking to you Longhis).
My daddy used to make me poached eggs when I was growing up and I still remember how warm and happy I felt with my little bowl of soft eggs. The boyfriend is a fabulous cook and makes the best hash browns, the perfect side dish to go with his super ono portuguese sausage and cheddar omelet. Speaking of local style breakfast, I adore corned beef hash with steamed rice and an over easy egg.
