The 40th annual Lanai Rendezvous wrapped up Saturday night and I’m a happy camper with a fridge full of ahi (yellowfin tuna) and uku (blue-green snapper).
This two day deep sea fishing tourney hosted by the Maalaea Boat & Fishing Club ended at the Manele Bay Harbor on Lanai followed by an evening of fellowship and fun.
For tonight’s dinner, the BF cooked up his fresh caught mahi and barracuda for the mauishopgirl ohana. First, he coated the fish in egg and then panko (Japanese bread crumbs). Followed by deep frying in veggie oil with smashed garlic. For the sauce, we mixed sriracha hot sauce with Best Foods mayo (the EVOO version).
Added some white rice topped with a little furikake and a side of greens with a creamy mustard dressing.
